Recipe: Parmesan Puffs (low carb appetizer or mini hamburger buns)

"These make delicious hamburger buns!"
2 extra-large eggs, at room temperature, separated
1/4 teaspoon cream of tartar
1 tablespoon cottage cheese
1/8 teaspoon salt
Dash of white pepper
1/4 teaspoon ground celery seed
Dash of onion powder
1/4 teaspoon baking powder
1 ounce Parmesan cheese, finely grated
Preheat oven to 325 degrees F. Grease a cookie sheet.
Beat egg whites until frothy, add cream of tartar, and continue beating until stiff but not dry.
In another bowl, beat egg yolks at high speed with an electric mixer until thick and lemon-yellow. Add cottage cheese, salt, pepper, celery seed, onion powder, and baking powder and beat for another minute.
Fold in Parmesan cheese, then gently fold beaten egg whites into yolk-spice mixture. Drop by heaping tablespoonfuls onto prepared cookie sheet.
Bake for 30 minutes or until golden brown.
2.2 grams of carbohydrate in entire recipe; makes 8 puffs, each containing 0.3 grams of carbohydrate.
