When you need to freeze cream puffs, do it without any filling inside (I'm sorry that I didn't clarify this up front! Ooh!)

The most important thing is to let them cool down absolutely to room temperature before you put them in zip-lock bags, or else they WILL be mushy when you defrost them. Otherwise, to defrost, place them on a wire cake rack in a single layer and let them slowly thaw. Don't refreeze, however, because they'll taste stale afterward.
