Mini cream puffs can be made, cooled completely to room temperature, and then frozen in gallon-sized zip lock bags. To use them, simply place them on a cake rack in a single layer to thaw, then cut off the tops and fill.

One of my favorite fillings is cream cheese & honeyed/deviled chicken (in a can, right next to the deviled ham at the store).

Or, since if you don't want to duplicate the cream cheese, consider mixing equal parts mayo, relish and shredded "krab" meat as a filler.

Weddings are such fun!
