re: Pinto Beans and Ham Hock answer for Carolyn

About an hour before it looked like the beans would be done, I pulled the hamhocks out, let them cool a bit, then pulled the little bit of real meat that's on them off, shredding it a bit and added back in.

I really love this recipe - it's not your regular baked beans, not at all the New England sweet variety that I'm used to.

Hope you try them. I used a package that had two hocks in it for my doubled recipe. There's not very much actual meat on them - more for flavor and smokiness. If I didn't restrain him, my DH would dig in and eat the whole hock, fat, skin and all (I guess that explains his by-pass of a few years ago! Life changes!)
