Nacho Cream Cheese Dip

12 ounces cream cheese -- softened
1 tablespoon finely minced garlic
1 tablespoon chopped fresh cilantro
1 teaspoon chili powder
paprika
1/2 cup shredded lettuce
1/2 cup chopped tomato
2 tablespoons chopped pickled jalapeno (or to taste)
2 tablespoons chopped pitted black olives
1 tablespoon chopped cilantro
Nacho or tortilla chips
Mix together rhe first 4 ingred. Spread evenly over a 10" plate; sprinkle with paprika. Refrigerate 10 min. Remove from fridge and top with remaining ingred. Scoop up with chips.

Hot Mexican Dip

This goes well with the 7-layer dip mentioned in your responses, especially since the event is a couples shower:
Hot Mexican Dip
1 15 oz. can refried beans (I like the refried black beans myself!)
1 C. salsa (mild, medium or hot) -- remember, it's a bridal shower!
1 C. grated cheddar cheese
1 small can sliced or chopped olives
1/2 C. grated monterey jack cheese (optional)
2 Tb. chopped cilantro (garnish)
Mix the beans, salsa, cheddar and olives in a microwavable bowl. Microwave on high for 1 min.; stir and microwave for another minute. Stir again. If the cheddar isn't completely melted, microwave in increments of 30 seconds until done. Spread onto a large plate at least 1" thick. Sprinkle with the monterey jack if desired, and sprinkle again with cilantro as garnish. Serve with tortilla chips.
If there's any left over, spoon it into large tortillas with slices of avocado for a great burrito.

Mr. Food's Snappy Southwest Dip

1/2 cup picante sauce
1/4 cup sour cream
3/4 cup ricotta cheese
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
Place all the ingredients in a blender and blend on high speed for 2-3
minutes, until well blended (or place in a medium-sized bowl and mix well
by
hand). Serve immediately or refrigerate until ready to serve.
Yield: 1 1/4 cups

NOTES : "Serve with tortilla chips or fresh veggies. And if you want to use lowfat ricotta cheese and
substitute yogurt for the sour cream, go ahead!"
