Misc. I was reaokbook last night (really!) and read a recipe for Potato Candy; my dad has mentioned it many times as a treat from his childhood. This recipe calls for unseasoned mashed potatoes, vanilla, salt, and enough powdered sugar to knead into the potatoes. Knead about a cupful at a time; the recipe stated that the potatoes will get very runny at the beginning of the process; just continue to sift more sugar on it and knead. Refrigerate for 2-4 hours. AFter that time, the dough should be ready to handle. Roll small amounts into a ball; dip into melted chocolate. This particular recipe also finished the candies off with a final coat of coconut while the chocolate is still sticky.
Think I'll treat my dad to some of these!
