BROCCOLI WITH HAM HOLLANDAISE
3 1/2 tablespoons butter
2 1/2 tablespoons flour
1 1/4 cups milk
2 egg yolks
1 1/2 tablespoons lemon juice
1/2 teaspoon salt
Few grains pepper
1/4 cup chopped cooked ham
Cooked broccoli
Melt 1 1/2 tablespoons of the butter in a double boiler, add the flour and mix well. Add the milk gradually and cook, stirring constantly until thickened.
Add a little of this mixture to the slightly beaten egg yolks, mix well and return to the double boiler. Add lemon juice, salt, pepper and the remaining 2 tablespoons of butter. Cook, stirring constantly for 1 to 2 minutes longer.
Add ham, reheat and pour sauce over the broccoli.
Serves 6
