Recipe: Milk Gravy, Mashed Potatoes and Scrambled Eggs (Pet Evaporated Milk, 1963)

WAYS TO USE EVAPORATED MILK IN EVERYDAY COOKING

MILK GRAVY

For each cup of gravy:
1 1/2 tablespoons flour
1/2 teaspoon salt
few grains pepper
1 1/2 tablespoons hot meat or poultry drippings
1/2 cup water
1/2 cup evaporated milk

Stir flour, salt and pepper into hot meat or poultry drippings. Stir in gradually 1/2 cup water. Boil and stir over low heat 1 minute. Stir in evaporated milk. Heat until steaming. Do not boil.

MASHED POTATOES:
Mix evaporated milk with an equal amount of potato water to use in mashing potatoes - makes them taste rich without a speck of butter.

SCRAMBLED EGGS:
Add 1 tablespoon evaporated milk and few grains salt and pepper to each beaten egg before scrambling. Makes eggs creamier-makes - them go further, too!
