Recipe: Potato Candy
Misc. I don't know it this is what you are looking for but it is the potato candy that my grandma always made and the recipe has been passed down through the family. A lot of guessing when it comes to the amounts. Take about 1 cup cold mashed potatoes and add powdered sugar to make a fairly stiff dough. Dust powdered sugar on rolling area and roll out to about 1/8 inch thick and spread with creamy peanut butter. Roll up jelly roll style and refrigerate. Keep well wrapped or it will dry out and get hard and crusty. i usually use just the instant potatoes and don't add salt or pepper to them. Just have to judge amounts by sight. Hope this is useful to you.
