I would stick to cold pasta salads and even Tuna salads. You can make these in the morning and they taste better by the end of the day after being in the fridge all day. One example is to cook a large box of elbow macaroni or small shells macaroni, drain and toss with some mayo and a can or two of drained tuna. Add some chopped onion, dash of black pepper and some pitted black olives. Toss and refrigerate until serving time. You can serve with sliced hard boiled eggs too. I'm a vegetarian so I buy frozen veggie burgs that are done in the microwave in two minutes! We eat them on buns with all the trimmings. (Ketchup, sliced onion, etc.) I add some fresh corn and some low-fat potato chips and dinner is made in about ten minutes. Enjoy your vacation!
