Recipe(tried): Christie's Hummus
Misc. Here is the recipe for hummus that I always use. Hope that you like it too!
Hummus- makes about 2 cups
1 (19 oz) can chick peas (garbanzo beans), drained
3 tsp tahini
5-6 cloves garlic, minced (I like mine garlicy so you may want to cut this down)
3 tbsp. fresh parsley, chopped (or 3 tsp dried)
1/4 cup olive oil
1/3-1/2 cup lemon juice
1/2 tsp ground coriander
1/2 tsp ground cumin
salt and pepper to taste
Combine all ingredients in a food processor or blender. Process until smooth and all ingredients have formed a paste. Enjoy!
Note from Chita: The hummus recipe seems normal enough with regard to ingredients, but the "Blend until smooth" might be a bit of overkill. Most Middle Eaterners do not reduce hummus to paste. After all, they often don't have blenders. Try doing it in thirds, with some of it smooth, some of it middling and the last third blended only a few seconds. This leaves a better mouth feel, IMHO. More "chewing satisfaction" too. Chickpeas offer great fibre.
