Dear Elizabeth,

I found a great site that will walk you right through your sourdough experience. go to yahoo and type in the word sourdough. scroll down and click on How to make sanfrancisco sourdough. then just down from it is a nother great site called suzies amazing bread pages. either one will give you all you need step by step. Now to get your consistant temperature right...go buy a styrofoam ice chest (large). cut a hole in the top and put a 7 1/2 watt light bulb in it. this gives you a perfect draft free invironment and maintains a constant temp at around 85 degrees which is what you need for maxium bread performance. My dad who was head baker in a bakery for many years taught me this. just remember that you need a thermometer to till you learn how to regulate the temp inside. just adjust the lid.

also i make my primary batter (which only takes a few minutes) at 9 at night and
it rises till 9 the next morning. i then start my bread at 9 am. if you need the recipe let me know.
