Gina can probably answer that more than I can, but I did make it (Sweet Potato Crunch) twice the day before I needed it, refrigerated it overnight then brought out for about an hour before putting it into the oven. No problems with that at all. I can't see why it wouldn't work to freeze it. But Gina will know, I'm sure.
