Jon, I checked the 2 cookbooks in which I found the hummus recipes, as well as some other sites with no luck finding a recipe for homemade tahini. One recipe said that you could substitute peanut butter so I wonder if you can make tahini (paste) the same way you can make peanut butter which would be putting a large amount of toasted/roasted sesame seeds in a food processor and processing it until it turned into a paste??!? I did read that tahini which is purchased in a store will last just about indefinitely but it might be fun to try using a processor and making your own, then compare the taste with that of purchased tahini. Good luck in finding a recipe for making your own from scratch! Should I find a recipe sometime down the road, I will post it at this site.
