Re: Tamale recipes

I have two suggestions: Have you looked in
any of Diana Kennedy's cookbooks? I use her
books constantly, and am never disappointed.
Also, if you like red tamales, have you tried
using chile chipotle? It is the smoked jalapeno,
and it you can find it in cans, packed in an
adobo sauce. I find it addictive.
