These legs seem to be everywhere. We have been to Universal Studios, the Magic Kingdom, EPCOT and MGM Studios. All these places sell the "Grail" of turkey legs. Because I love them so much I wanted (like you) to be able to reproduce them at home. When I started I didn't think that it would be a difficult task. After all, it's just amusement park food. We are not talking NASA stuff here, right? Boy, was I wrong!!!
My first attempt was just to buy some raw turkey legs from the local Wallyworld (Walmart) and stick them in my smoker with hickory wood. I got smoked turkey legs but not what they serve at Universal. Good but no cigar!
My second attempt included brining the legs overnight and then smoking them the same way. They were juicery than the first try but again, no cigar.
I then decided to go at this from a different angle. I decided to analyze the product from the top (finished product) down. Post a message if you want to know how it all came out. hint: YUM YUM
