Salad w/Olives, etc.
I've looked high and low for a recipe that I seem to remember but can not find one as you describe with cranberries. I seem to remember that crushed pineapple was one of the ingredients, could that be the one you have in mind?
Here's what I would try.......
2 pkg dark cherry jello dissolved in 2 c. hot water. Add juice from pineapple and water to make 2 c. When slightly congealed, add:
1 c. diced celery
1 can drained, pitted bing cherries
3/4 c. chopped pecans
3/4 c. sliced stuffed olives
1 c. crushed, drained pineapple
Pour into mold and refrigerate. Serve on lettuce leaf and pass mayonaise.
