Recipe: Cranberry Salads (7)

Salads - Fruit, Gelatin
I can't find anything with olives, but maybe you can make one of these work:

CHERRY CRANBERRY SALAD

lg. pkg. black cherry Jello
1 1/2 c. boiling water
1 c. orange juice
1 c. wine (any liquid)
1 can (#2 size) black cherries
1 jar orange-cranberry relish
1/2 c. chopped nuts

Mix Jello with boiling water and let cool. Add orange juice and wine. Let stand until it starts to thicken. Then add cherries, relish and nuts. Put into mold and chill until firm.

THANKSGIVING CRANBERRY SALAD

1 lb. cranberries
1 c. sugar
1 lb. miniature marshmallows
1 can drained, crushed pineapple
2 c. cream, whipped
1/2 c. chopped nuts

Grind cranberries, add sugar. Mix well and let sit for 1/2 hour. Add the rest of the ingredients. Mix well, keep in refrigerator.

HOLIDAY CRANBERRY SALAD

1 can cranberries (divide in half)
2 sm. pkgs. Jello (either strawberry, cherry or raspberry)
1 (8 oz.) Philadelphia Cream Cheese (softened)
1/3 c. sour cream
Nuts

Mix 1/2 can of cranberries with 1 cup of hot water to 1 package of Jello. Add nuts to this mixture. Put in about a 6x10 dish to chill until firm. Cream Philadelphia Cream Cheese and sour cream. Spread on top of Jello mixture. Mix second package of Jello with remaining cranberries and 1 cup hot water. Add more nuts. Pour on top of cream cheese. Chill until hard. For presentation, cut into squares and place on top of Boston or red tip lettuce. Yield: 12 servings. Optional: Fruit can be added to Jello mixture.

TAMMY'S HOLIDAY CRANBERRY SALAD

1 c. cranberries (fresh raw)
1 c. sugar
1 lg. jar Royal sweet cherries
1 c. mandarin oranges
1/2 c. English walnuts, chopped
1 1/2 c. whipping cream
2 tbsp. sugar
1 c. mini marshmallows

Grind cranberries and mix in 1 cup sugar. Let this sit overnight in refrigerator. In the morning, drain off the juice and then add cherries, oranges and nuts. Whip the whipping cream slowly, adding the 2 tablespoons sugar. Fold whipping cream and marshmallows into fruit mixture. Refrigerate.

CHRISTMAS CRANBERRY SALAD

1 lb. cranberries (fresh or frozen)
2 1/4 c. boiling water
2 tbsp. gelatin
1/2 c. cold water
2 c. sugar
1 c. broken pecans
1 c. diced pineapple, canned
1 c. grapes, seedless & cut

Boil cranberries in water until all "pop". Dissolve gelatin in 1/2 cup cold water. Add to cranberries and stir until dissolved. Add sugar and dissolve. Cool. Add nuts and fruit. This will fill a 2 quart bowl or mold. Cover with Saran Wrap touching the mix (get air out). May be made two days ahead. Serve on lettuce. Garnish with mayonnaise.

2 c. sugar
1 pkg. lemon Jello
1 pt. hot water
1 c. nuts
1 c. marshmallows
1 c. celery
1 c. apple
1 c. crushed pineapple

Bring the cranberries and orange; add sugar. Mix and let stand overnight. Dissolve Jello in water and when half set, add to first mixture and add nuts, marshmallows (cut in pieces), celery, apple, and pineapple. Pour in mold and chill.
