The pickles are normally just kept in the fridge because most people just make just a small amount to be eaten fresh. Canning them will extend their storage life. I am sure that is why she did it that way. They may not be quite as crisp, but should work. Heat the brine, pack the pickles in the jars, then add the brine, remove air bubbles, seal, and process in a water bath canner for 10 minutes.
