Request: Making Sausage recipes

Misc.
Once people butchered their own hogs (and helped their neighbors butcher hogs) in
early winter. I know someone must have a wonderful sausage recipe.
Sausage made from scratch. I would love a good recipe for boudin sausage, or annice andouille sausage recipe. If you have one of these or another wonderful recipe for making sausage, please post it here, Thank ya'll
