Smoking cheese

Hi there, we have a portable smoker that you use outside. We love to do cheese in it. It is a real treat and it is very expensive to buy. We have used various types of wood chips. They give a bit of different flavor. Apple wood chips are great but there are lots of different types. We put a piece of any type hard cheese about 3-4 inches square , or a few pieces this size in at a time. You only need to smoke them about 30 min. Put them in the fridge to cool and the flavor gets better. Try it it is awesome. Delicious with apple slices and a glass of wine. MMMMMMMM Happy smoking.
