Susan - Fresh water clams -

Hi Susan - I'm not at all sure about fresh water clams - I've only used salt water ocean clams, which are of two varieties (or three, if you count the giant sea clams)There are the quahogs which are hard shell clams or the steamers which are soft shell clams.

If you put in a search on Google or Ask Jeeves, you might find some information on the fresh water variety. If you find out you can use them like salt water clams, I can provide you with lots of "recipes" although most of mine are just doing it by eye and smell! No specific amounts.

I'll be looking to see if you find out about them and want the recipes.
