Michelle, I assume that you are talking about the jars of garlic that are already roasted and chopped. I bought one of those too and have just been using it in recipes that call for garlic. So far it has worked out just fine.
I want to try and duplicate, a very expensive, and tasty roasted garlic and onion jam that I bought in a speciality shop. my last try was close, but I haven't got it yet.
