Tips: Melting Chocolate in a Double Boiler

Hi Ginger, I have to agree with those that suggest a double boiler. If you are dipping alot of quantity and the chocolate gets to thick to handle , all you have to do is return over boiling water and it returns back to the same consistency as you started. If you don't have a so called double boiler you can use a smaller stainles mixing bowl over the hot water pan and it will do the same thing. ( what I mean here is one that will sit nicely on top of pan like a top would and allow enough room for water to boil and not boil over, use deep saucepan under). I have melted chocolate in microwave and it does work but, I was not as happy with the outcome and, it in my opinion should be used only for a small quantity needed. This is just my opinion so I hope no one thinks I'm being controversial. I use parafin and chocolate together when melting for candy purposes. For example 1 pkg. of semi-sweet squares and 1/2 cake parafin. I would use Almond bark or candy coating for pretzels. You have gotten lots of good advise here from others, and like I said, I am sharing how I do it and always have nice results.
