Hi Jill,
I am about to go on maternity leave and I plan on having a stocked freezer for AT LEAST the first week after I have my baby. I looked all over the web for freezer food and I found some really easy sounding freezer recipes at:

www.reynoldskitchens.com

It had a bunch of handy tips also like freezing your casserole in a foil lined baking pan then removing it from the pan after it had been frozen through so you have a casserole cube that way you save space in the freezer and you can still use your bake wear for other things.
