Recipe: Lunchtime Biscuit Foldovers (using homemade biscuit dough)

LUNCHTIME BISCUIT FOLDOVERS

2 cups unbleached flour
1 tbsp. baking powder
1 tsp. salt
1 stick (1/2 cup) butter or margarine
3/4 cup milk
2 cups diced cooked chicken (or cheddar cheese or other filling)

Stir together flour, baking powder, and salt. Cut in butter with pastry blender until mixture is the consistency of coarse crumbs. Add milk and stir with fork.

Flour hands and squeeze dough until all is moistened and dough forms a ball. Turn out onto floured surface and roll or pat out until dough is 1/2-inch thick. Cut with 2 1/2-inch round cookie cutter and flatten each ball out to a 4-inch circle.

Place 2 tablespoonfuls of filling in the center; fold over to a half-moon shape, and seal edges with a fork. Place on a greased cookie sheet.

Bake at 400 degrees F for 15-18 minutes.

Makes 10-12 biscuits
