Recipe(tried): Sweet Potato Casserole

Darlene I hope that this recipe doesn't get to you too late. This is a recipe that I have been using for the past 5 years and have gotton rave reviews. Everyone that has tried it has asked for the recipe to use for their family and friends and they have then asked for the recipe for themselves. I think the key ingredient is the sweetened condensed milk. I hope you enjoy it. Please let me know.

Sweet Potato Casserole

4 large sweet potatoes
1/2 cup sugar
1/2 cup sweetened condensed milk
1 tsp cinnamon
1/4 cup unsalted butter, melted
juice of 1 orange
1/2 cup of pecans, chopped
8 marshmallows for garnish

Place the potatoes in large pot, and add water to cover. Bring to a boil over high heat. Reduce heat and cook until potatoes are tender, about 30 minutes. Drain. Preheat oven to 375 degrees

When cool enough to handle, peel the potatoes and cut them into large chunks. In a large mixing bowl, mash the potatoes. Add sugar, condensed milk, cinnamon, butter and orange juice. Whisk until smmooth. Stir in the chopped pecans. Empty the mixture into a buttered 9 x 13 inch baking dish. Top with marshmallows and bake until heated through and marshmallows are slightly browned, 15 - 20 minutes.
Serves 6.
