Recipe: A Couple of Chili Recipes

There is nothing I enjoy more than making chili and trying new recipes! This might be something like what you are searching for. I have also included a creation of my own...it has a wee bit of tomato in it, but I think it is pretty tasty!
TEXAS TEQUILA CHILI
1 T Olive oilil
3 lb ground beef
4 Garlic cloves, minced
5 T good quality chili powder
1 T ground cumin
1 1/2 t ground red pepper or cayenne
1 T Mexican Oregano
1 T Salt
2 c Tequila (yes, 2 cups!)
6 c Water
1/2 c masa harina
Optional
1 T crushed chile flakes
1 t of your favorite hot pepper sauce
warm tortilllas
sour cream
shredded cheese
cold beer or margaritas
Brown the meat. Add garlic, chili powder, cumin, cayenne pepper, oregano,
salt, tequila, water, and masa harina. Bring to a boil, then lower the heat and simmer, uncovered, for about 2 hours
If desired, add the crushed chile flakes and the optional hot pepper
sauce and simmer, uncovered, for 1/2 hour longer. Serve in bowls with a warm tortilla on the side. Maybe a little sour cream and shredded cheese, too! Yum!

Here's the one that is my very own creation. Just a little tomato, and the wine gives it a complex flavor. I'm not suggesting this is how they do it in the Napa Valley...I just liked the sound of the name! :)
Briz's Napa Valley Wine Country Chili
1 T. olive oil
1 lb. lean ground turkey
1 lb. lean, boneless pork chops or seasoned turkey cutlets, 1 inch cubes
1 medium Spanish onion (or Vidalia in season)
2 heaping T. minced garlic
3 T. chili powder
1 T. paprika
1 T. coarse ground black pepper
1/2 T. ground cumin
1/2 T. oregano
1/2 t. coriander
1/2 t. cayenne
1/2 t. chile caribe
1 cup dry, Napa Valley zinfandel wine
1 16 oz. jar of your favorite medium salsa
1 15 oz. can Hunt's Ready Italian style tomato sauce
1/2 cup demi-glace
3/4 cup beer
1 15 oz. can kidney beans, drained
Saut the onion and garlic in the oil. Transfer to large kettle. Brown the ground turkey, drain, and transfer to the kettle. Repeat for the seasoned turkey cutlets or pork chops. Add the remaining ingredients, except the beans, and bring to a boil. Reduce heat, and simmer 1 1/2 to 2 hours. Add the beans towards the end of cooking. Serve.
