Recipe: Zucchini Casserole (using onions, tomatoes and Cheddar)

ZUCCHINI CASSEROLE

2 cups chopped onions
1 stick (1/2 cup) butter or margarine, divided use
2 Tbsp flour
1 (16 oz) can tomatoes
1 tsp sugar
4 cups diced zucchini
1 cup grated Cheddar cheese

Saute onions in 1/4 cup butter until tender.

Blend in flour. Add tomatoes and sugar; simmer until thickened. Remove from heat.

Saute diced zucchini in 1/4 cup butter.

Line a 2 quart casserole with 1/2 of the tomato sauce. Spread on the squash. Add the cheese. Add rremaining tomato sauce. Sprinkle with cracker crumbs.

Bake in 350 degree F oven for 40 minutes.
