Recipe: Pumpkin Chocolate Chip Cookies (Repost)

Pumpkin Chocolate Chip Cookies
Submitted by: Beth Unique combination that you will be glad you tried.

Ingredients:
1/2 cup shortening
1 1/2 cups white sugar
1 egg
1 cup canned pumpkin
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 cup chopped walnuts (optional)
1 cup semisweet chocolate chips

Directions:
1Preheat oven to 350 degrees F (180 degrees C). Grease cookie sheets.
2Cream shortening and sugar in bowl until light and fluffy. Add egg, pumpkin and vanilla. Mix well.

3Add mixture of flour, baking powder, baking soda, salt and spices; mix well. Stir in walnuts and chocolate chips.

4Drop by teaspoonfuls onto greased cookie sheet. Bake for 15 minutes or until light brown. Cool on wire rack. Makes 4 dozen
