Orange-Nut Chicken Supreme
This recipe is from Clementine Paddleford's Cook Young Cookbook
1 egg, slightly beaten
2 Tablespoons grated orange rind
1 Tablespoon undiluted concentrated orange juice, thawed
1/2 cup crushed salted cashews
1/2 cup fine bread crumbs
1/2 teaspoon salt
1/2 teaspoon pepper
2 to 3-pound broiler-fryer cut up
2 Tablespoons melted butter or margarine
Combine egg, orange rind and concentrate; mix well. Let stand 10 minutes.
Combine crushed nuts, bread crumbs, salt and pepper.
Dip chicken pieces first in egg mixutre, then in nut-crumb mixture.
Pour melted butter into shallow baking dish. Add coated chicken pieces.
Bake, uncovered at 350 degrees F. for 1 hour or until done.
Yield 4 to 6 portions.
