Recipe: Pickled Cabbage and Peppers

Pickled Cabbage and Peppers
This recipe is on my "To Do" list from the book Joy of Pickling by Linda Ziedrich which I recommend! The book also has chapters in canning.

2 pounds trimmed fresh white head cabbage,shredded
5 cups green or red bell peppers, cut into thin strips
1/4 cup pickling salt
1 cup sugar
1 1/2 cups white wine vinegar
1/2 tsp. hot pepper flakes
4 tsp. black mustard seeds
6 garlic cloves, minced

In a large bowl or crock, toss the cabbage and peppers with the salt. Cover the container and let it stand in a cool place 8 to 12 hours.
