ONE-PAN FRESH APPLE SNACK CAKE
"Here's an easy quick recipe. Good for feeding hungry kids or husbands who are feeling neglected because their wives are using the computer so much."
1 cup all-purpose flour
1/2 cup brown sugar, packed (dark or light)
1/2 cup chopped, unpeeled, cored cooking apple (about 1/2 medium-size apple)
1/2 cup finely chopped walnuts
1/4 cup melted margarine
1 large egg
1 teaspoon baking powder
1 teaspoon vanilla extract
1/4 teaspoon salt
1.4 teaspoon ground cinnamon
Heat oven to 350 degrees F.
Put all the ingredients into an ungreased 8-inch square baking pan. Mix well and then spread stiff mixture evenly in pan.
Bake 25 to 30 minutes, until a cake tester inserted in the center comes out clean. Remove pan from oven and place on a wire rack to cool for 10 to 15 minutes. Run a knife between the edge of cake and pan to loosen. Cut into 16 squares and serve from pan.
Makes 1 (8-inch) cake, 16 servings
