Recipe: Swiss Steak (Heinz, 1967)

SWISS STEAK

2 to 3 pounds round steak, cut about 1-inch thick
1/4 cup flour
1 teaspoon salt
1/ teaspoon pepper
1 teaspoon paprika
1/4 cup shortening or salad oil
1 large onion, sliced
1 large green bell pepper, sliced
1 (4 ounce) can mushroom stems and pieces
1 1/3 cups Heinz Tomato Ketchup
2 cups water

Cut steak into serving pieces; trim excess fat.

Combine flour and next 3 ingredients. Pound seasoned flour into both sides of meat with mallet or edge of saucer.

In hot shortening in large, heavy skillet or Dutch oven, brown meat on both sides.

Add onion, green pepper and mushrooms.

Blend ketchup and water; pour over steak. Simmer, covered, stirring occasionally 2 to 2 3 hours or until meat is tender. Sauce may be thickened.

Makes 6-8 servings
