Recipe: Mardi Gras Slaw (using red cabbage, edamame and cilantro)

MARDI GRAS SLAW

1/2 head red cabbage, shredded
1 (10-oz.) bag fresh edamame, beans only, not pods
3 tablespoons toasted sesame seeds
1/2 cup lightly packed chopped cilantro
6 scallions, thinly sliced
Red radishes, thinly sliced, optional
Salt and pepper to taste
FOR THE DRESSING:
3 tablespoons dark sesame oil
3 tablespoons rice wine vinegar
2 tablespoons sugar

Combine sesame oil, vinegar and sugar in small bowl and set aside.

Combine all other ingredients in large bowl, add dressing and toss gently. Cover and refrigerate at least 4 hours.

Makes 8-10 servings
