Recipe: Village Inn Pancakes

Breakfast and Brunch
I have used this pancake recipe for many years. Even though it did not come directly from from Village Inn. I think the original came from a restaurant in Western Kansas.

VILLAGE INN PANCAKES

Place in blender:
1 cup buttermilk*
1 egg
1 1/2 tbsp salad oil (or melted butter)
1 1/2 tbsp sugar

Blend a few seconds. Add dry ingredients:
1 cup flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt

Pulse blend, scraping down sides for a few seconds.

Pour onto hot griddle (375 - 400 deg). Turn when tops are full of bubbles.

*(Milk can be substituted instead of buttermilk. Omit soda)
