Recipe(tried): Cookers Bar and Grill Cheese Potato Soup (copycat recipe)

4 russet potatoes diced and boiled
3 to 4 Tbsp butter, melted
2 Tbsp diced onion
3 Tbsp flour
2 tsp better than bullion chicken base
1 pint (2 cups) half and half
6 oz Colby jack cheese, shredded
6 oz cheddar jack cheese, shredded
1/4 tsp ground black pepper
Dash of onion salt
1 cup milk
Boil potatoes in a small pot.
In a separate pot, melt butter and add onion, cook until onion looks clear; then add flour to make a roux. Add half and half and stir a few minutes before adding cheeses, better than bullion, pepper and onion salt.
Drain potatoes and add to soup mixture. Add milk to thin to desired consistency. (some days Cookers had it thicker and some thinner :-) )
AMAZING, tastes like the real thing and I LOVED this soup.
