Recipe: London Broil Marinade (using soy sauce, tomato juice, brown sugar, and garlic)

LONDON BROIL MARINADE

"I have probably given this marinade recipe out more than any other recipe I have. It is wonderful."

3 cloves of garlic finely chopped
1/2 cup vegetable oil*
1/2 cup soy sauce**
1/2 cup tomato juice***
1/2 cup brown sugar
1/2 teaspoon black pepper

Combine everything in a small bowl. Using a sharp knife score London broil on each side (I highly recommend an oyster cut London broil). Place meat in a glass dish and pour the marinade over the top. Refrigerate 24 hours, turning frequently.****

Let stand at room temperature an hour or two before grilling.

Drain marinade from the steak into a small saucepan. Skim the oil from the top. Bring marinade to a boil and boil for a few minutes.

Cook steak as desired.

I slice the meat thin and serve with the marinade. Makes great sandwiches.

*I have used a 1/4 cup of oil with no noticeable difference.

**I use low sodium soy sauce.

***I have used tomato sauce instead of tomato juice without a noticeable difference.

****I have also marinated the meat for only and hour and gone straight from refrigerator to grill.
