Recipe: Ricotta Cheese Icing

Ricotta Cheese Icing
Source: Secrets of Fat Free Baking by S. Woodruff

Try this on spice cakes, banana or other fruit cakes.

2 cups ricotta cheese, part skim milk
1 teaspoon vanilla extract
4 tablespoons honey or maple syrup

Place all ingredients in a food processor and blend until smooth.
