Ricotta Cookies

1 lb. butter
2 cup sugar
3 eggs
1 lb. ricotta cheese
2 tsp. vanilla
1 tsp. salt
4 cup flour
1 tsp. baking soda
Cream together butter and sugar until fluffy.
Combine eggs, cheese, vanilla and salt. Add to butter mixture.
Sift flour and baking soda. Add everything together.
Bake in preheated 350 degrees oven for 12 minutes. Cookies will be in shape of small mounds. Do not let them brown. Cool. Frost with icing and dip top into finely chopped nuts, if desired.
Frosting
2 Tbsp. butter
2 Tbsp. milk
2 cup powdered sugar
food color (optional)
Mix until blended and spread on cookies.
