Scott Baio's Grandmother's Ricotta Puffs

Makes 2 dozen

1 cup flour
1 tsp. baking powder
1 tbsp. vanilla
2 eggs
1 lb. tub ricotta cheese
2 tbsp. sugar
powdered sugar

Heat oil in a deep saucepan or fryer to 375F.

Mix all other ingredients except powdered sugar.

Carefully, add a tablespoon of mixture at a time to hot oil. Within a minute, the balls will form puffs and turn a golden brown. Drain on paper towel and sprinkle with powdered sugar. Serve warm.
