Recipe: Apple Zucchini Bread (with nutmeg, cinnamon and pecans)

APPLE ZUCCHINI BREAD

4 cups flour
1 tbsp. baking soda
1 1/2 tsps. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. salt
5 eggs
1 1/2 cups oil
2 cups sugar
1 cup brown sugar
1 tbsp. vanilla
1 cup shredded, unpeeled zucchini
2 cups peeled, shredded apples
1 1/2 cups pecans

Preheat oven to 350 degrees F. Grease 3 (8x5-inch) loaf pans.

In a large bowl, combine flour, baking soda, cinnamon, nutmeg and salt.

In another bowl, beat eggs. Add oil, sugars and vanilla. Pour over dry ingredients. Mix well. Stir in zucchini, apples and pecans (batter will be stiff ). Spoon into prepared pans.

Bake for 50-55 minutes, or until done. Cool in pans 10 minutes before removing to a wire rack to cool completely.

Makes 24 muffins
