Recipe: Sugo Sauce (light tomato sauce for pasta)

SUGO SAUCE

"In Italian, "sugo" means sauce and this light tomato sauce is classic for all types of pasta."

1 tablespoon olive oil
4 cloves garlic finely chopped
1 small onion chopped
2 cans (28 ounces each) Italian pear shaped tomatoes drained
2 tablespoons chopped fresh basil leaves
2 tablespoons chopped fresh oregano leaves
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Heat oil in 3 quart saucepan over medium high heat. Saute garlic and onion in oil.

Place tomatoes in food processor or in blender; cover and process until smooth.

Stir tomatoes and remaining ingredients into mixture in saucepan. Heat to boiling; reduce heat. Simmer uncovered 45 minutes, stirring occasionally.

Makes 6 servings
