Recipe: Peanut Butter Oatmeal Scotchie Bars

PEANUT BUTTER OATMEAL SCOTCHIE BARS
"Creamy peanut butter, oats and butterscotch chips make these bars a treat for kids of all ages."



FOR THE CRUST:
10 tablespoons butter OR margarine, softened
1/4 cup brown sugar
1 cup all-purpose flour
1 cup quick-cooking oatmeal, uncooked

FOR THE FILLING:
3 eggs
3/4 cup Karo Dark Corn Syrup
3/4 cup sugar
2 tablespoons butter OR margarine, softened
1 teaspoon Spice Islands Vanilla Extract
1/4 cup creamy peanut butter
1 cup pecans, chopped
1 2/3 cups (11 ounce package) butterscotch chips
Directions

Preheat oven to 350 degrees F. Spray a 13x9-inch baking pan with cooking spray.

For the crust, beat together 10 tablespoons butter, brown sugar, flour and oats until crumbly. Press into the bottom of prepared baking pan.

Bake for 10 to12 minutes or until lightly browned.

For the filling, beat eggs, corn syrup, sugar, 2 tablespoons butter, vanilla and peanut butter until combined. Stir in pecans and butterscotch chips. Pour over hot crust.

Bake for 25 to 30 minutes or until filling is set. Remove from oven and cool completely.

Cut into squares.

Makes 24 bars
