Recipe: New Southern Greens

NEW SOUTHERN GREENS

3 tablespoons apple cider vinegar, divided use
1 bunch mustard or collard greens, washed
1 onion, diced
1 tablespoon olive oil
3 slices vegetarian "bacon" or "ham", diced
1/2 to 1 teaspoon red pepper flakes
salt (to taste)

Fill 2-quart saucepan with water. Bring to a boil; reduce heat to simmer. Add 2 tablespoons vinegar and mustard or collard greens. Cook greens until soft, about 15 minutes. Drain greens.

In skillet, saute onion in oil over medium-low heat until soft and translucent, about 2 to 3 minutes.

Add greens, "bacon" or "ham" and red pepper flakes. Saute for 2 to 3 minutes.

Add remaining 1 tablespoon vinegar; cook until vinegar evaporates. Add salt to taste.
