Here is a great tofu recipe to try for someone who is a little leary of eating tofu.
TOFU SLOPPY JOE
1/2 lb. tofu, previously frozen, defrosted and shredded (see note)
1/2 box of frozen chopped spinach, defrosted and drained very well.
1 can MANWICH sloppy joe sauce
1 medium zucchini, shredded.
Combine the shredded zucchini, spinach and tofu with the sloppy joe sauce.
Cover and bring to a boil.
Lower the heat and simmer for about 15 minutes.
Tofu sloppy joe can be served on a grain (rice, bulgur, couscous) or on a bun.
Note about frozen tofu: If the tofu is frozen first it will have a "meaty" texture.
