Recipe(tried): Fennel and Vidalia Onion Salad

Salads - Assorted
FENNEL AND VIDALIA ONION SALAD

fennel, thinly sliced
Vidalia onion, thinly sliced
naval oranges, diced and fresh squeezed juice
olive oil
salt and pepper
Riviera salad mix or mixed baby greens and spinach
grilled chicken (optional)
toasted almonds (opttional)

Dry grill fennel and Vidalias.

Mix together diced oranges, freshly squeezed orange juice, and olive oil. Season to taste with salt and pepper.

Mix all with Riviera salad mix or mixed baby greens and spinach. Add chicken and almonds, if desired.
