1 lb currants
1 lb raisins
8 oz. prunes
4 oz citron or mixed peel
1 t mixed spices
4 T. rum or brandy
1/2 pt. wine or sherry
1 lb. butter
1 lb. self-rising flour
1 lb dark cane sugar
10-12 eggs
1/2 t. almond essence
finely chopped nuts (optional)
Wash and grind currants, raisins and prunes, put into a large, clean jar. Add citron or peel, a little sugar, mixed spices, rum or brandy and the wine or sherry. Leave all these covered for anything from 2 weeks to 3 months, the longer the better. Before mixing the cake, grease and line a 10 inch baking tin with a double layer of grease-proof paper and set aside. Sieve flour. Cream butter and sugar, adding one egg (beaten slightly if possible) at a time. Mix to a creamy consistency and add to fruits from jar. Slowly add flour, essence and nuts. Mix well, adding 1-2 T. sherry if mixture is too stiff. It should just fall off the back of a spoon, but should ot be too runny. Put into the prepared tin and covered loosely with foil Put in a pre-heated oven at 325 degres, bake for 2 1/2 hours until cake is firm and springy. Leave to cool overnight.
