BOBBY'S FAVORITE TOASTED SPICE CAKE
1/3 c. Crisco shortening
1 c. sugar
1 egg, separated
1/2 tsp. soda
2/3 c. sour milk
1 1/2 c. flour (sifted)
1 1/2 tsp. baking powder
1/2 tsp. each cloves, salt, cinnamon, ginger
1 tsp. vanilla
Blend Crisco with sugar, add egg yolk in brisk beating. Dissolve baking soda in sour milk. Add milk alternately with dry ingredients. Mix until smooth. Pour into greased 7 inch square pan. Spread over batter brown sugar meringue: Beat 1 egg white (left over from cake batter) until it holds a peak. Slowly add 1/2 cup brown sugar and continue beating until smooth. Spread over cake batter. If desired, sprinkle with 1/4 cup chopped nuts. Bake in 350 degree oven 35 to 40 minutes.
RED DEVILS LOAF
2 c. flour
1 1/4 tsp. soda
1/4 tsp. salt
1/2 c. butter
1 c. sugar
1 tsp. vanilla
2 eggs
2 squares chocolate, melted & cooled
3/4 c. sour milk
1/3 c. boiling water
Cream butter and sugar. Add eggs. Sift dry ingredients and add alternately with sour milk and vanilla. Stir in melted chocolate. Add boiling water last and beat well. Bake in loaf pan at 350 degrees for 45 minutes. Do not cut for at least two hours to let the red color fully develop.
BANANA BUTTERMILK BREAD
1/2 c. shortening
1 c. sugar
2 eggs, beaten
1 c. buttermilk or sour milk
2 tsp. baking soda
2 1/4 c. flour
1/2 tsp. salt
1 tsp. baking powder
2 c. mashed bananas
1/2 c. nuts, chopped
Cream shortening and sugar; add eggs. Stir baking soda into buttermilk and add to mixture. Add bananas and flour, salt and baking powder. Mix well. Stir in nuts. Pour into 2 greased loaf pans. Bake at 375 degrees for 1 hour.
COWBOY COFFEE CAKE
2 1/2 c. sifted all-purpose flour
1/2 tsp. salt
2 c. packed brown sugar
2/3 c. shortening
2 tsp. baking powder
1/2 tsp. soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. sour milk (regular milk will work)
2 well beaten eggs
Combine flour, salt, sugar, and shortening; mix until crumbly. Reserve 1/2 cup of mixture. To remaining crumbs, add baking powder, soda, and spices, mix well. Add milk and eggs, mix well. Pour into 2 waxed paper lined 8 x 8 x 2 inch baking pans; sprinkle each with reserved crumbs. Chopped nuts and cinnamon may be sprinkled over crumbs. Bake at 375 degrees for 25 to 30 minutes. Serve warm.
SHARI'S SOUR MILK PANCAKES
1 to 1 1/4 c. flour
2 tbsp. sugar
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1 egg, beaten
1 c. sour milk (1 c. sweet milk plus 1 tbsp. vinegar)
1 tbsp. vegetable oil
Preheat griddle to pancake setting (350 to 375 degrees). Sift together dry ingredients, using 1 cup flour. Combine egg, milk and oil and add to dry ingredients. Gradually add the 1/8 to 1/4 cup additional flour until batter is of medium consistency. Mix until just combined (overbeating toughens). Makes about 12 pancakes.
COCONUT WASHBOARD COOKIES
14 c. brown sugar
1 3/4 c. sour milk
3 1/2 tsp. vanilla
7 tsp. baking powder
7 tsp. baking soda
3 1/2 tsp. salt
7 c. shortening
14 eggs
7 c. shredded coconut
26 1/2 c. flour
Cream together the sugar, shortening and eggs thoroughly. Add milk, vanilla, and coconut, mixing well. Spoon flour into dry measuring cup and level off and pour measured flour into a separate bowl. Add the baking powder, soda and salt to the flour and stir well to blend. Now add blended dry ingredients to the creamed mixture and stir until smooth. Divide and shape dough into rolls and wrap in waxed paper. Chill overnight or until firm. Slice into 1/4 inch pieces. Place on ungreased cookie sheet. Press gently with tines of fork. Bake in 400 degree preheated oven for 8 to 10 minutes. For a very large family.
WHOOPIE PIES
1 c. shortening
2 c. sugar
2 eggs
2 tsp. baking soda
1 tsp. baking powder
2 egg yolks
4 c. flour
1 c. sour milk
1 c. hot milk
1 c. cocoa
1/2 tsp. salt
1 tsp. Vanilla
FILLING:
2 egg whites (do not beat)
2 tsp. vanilla
4 tbsp. flour
2 tbsp. powdered sugar
4 tbsp. milk
1 1/2 c. shortening
Mix all ingredients. Drop by teaspoon on greased cookie sheet. Bake at 350 degrees until top springs back. Beat well. Add 4 cups powdered sugar. Beat until fluffy. Use between whoopie pies cut in half.
MABEL ROBBINS' EGGLESS DARK CAKE
2 c. white sugar
4 tbsp. cocoa
2 scant tsp. soda
Pinch of salt
3 c. flour
2 c. sour milk*
1/2 c. melted lard
Vanilla to taste
Powdered sugar
*To make sour milk. Add 1 tablespoon of white vinegar or lemon juice to 1 cup milk and let stand for 10-15 minutes. Preheat oven to 350 degrees. Grease and flour 13 x 9 pan. Sift together all dry ingredients. Add melted lard and beat. Flavor with vanilla. Bake until toothpick inserted into center comes out clean. Cool and sprinkle with powdered sugar. A war department recipe from WWII when they rationed eggs.
NO - EGG DEVILS FOOD CAKE
4 1/2 c. flour
2 3/4 c. sugar
1 c. cocoa
1 1/2 tsp. baking soda
1 tsp. salt
2 c. shortening
3 c. sour milk or buttermilk
2 tsp. vanilla
Mix all dry ingredients, then add shortening and milk. Bake 40 to 45 minutes at 325 degrees.
SALMON PUFFS
1 lg. can salmon, drained
1 1/4 c. flour
1 1/2 tsp. baking powder
1/4 c. meal
1 beaten egg
3/4 c. sour milk
Drop by small teaspoons in deep fat. Cook until brown.
CURRIED MEAT
4 sliced onions
2 chopped cloves garlic
4 lbs. diced meat
6 green chilies, chopped
1 lb. dried apricots
2 tsp. turmeric
2 tsp. coriander
1 piece crushed raw ginger
2 chopped green peppers
2 sticks cinnamon
2 tins tomato puree
4 tbsp. curry powder
4 tsp. vinegar
2 c. yogurt or sour milk
2 c. apricot jam
Pinch of sugar
MSG
6 cloves
4 c. stock*
*Decrease stock by 1/2 if short cooking time. Cook in open crock pot or kettle all day.
SNITZ AND KNEPP
4 c. dried sweet apples
2 1/2 c. ham, cubed, not precooked
5 c. water to cook ham
2 tsp. sugar
2 tsp. Butter
DOUGH - KNEPP OR LITTLE DUMPLINGS:
4 c. all-purpose flour
2 c. buttermilk or sour milk
1 tsp. baking soda
1 tsp. salt
Wash dried apples. Place in bowl and cover with water. Soak overnight. Place ham and water in large cooking pot. Cook until soft. Add sugar, butter and water in which the apples were soaked along with the apples into the ham and water. Cook for about 1 hour over medium heat, stirring occasionally. Sift together dry ingredients for knepp in large bowl. Add buttermilk and stir until dry ingredients are incorporated. Drop by tablespoon into the ham and apple. Cover and cook for 15 minutes. Serve hot or warm.
FOOLPROOF DUMPLINGS
1 egg, beaten light
1/4 tsp. salt
1 tbsp. sour milk
3/4 c. flour
1 1/4 tsp. baking powder
Mix together and cook until done in chicken broth.
TUNNEL DWELLERS MEAT PIE
1 lb. ground round
1 c. chopped onions
1 (15 oz.) can tomato sauce
2 med. sized sweet green peppers, chopped
1 c. canned whole corn, drained
1 tsp. chili powder
1 tsp. salt
1 tsp. Pepper
CRUST:
2 eggs
1 tbsp. vegetable shortening
1/2 c. buttermilk or sour milk
3/4 c. yellow cornmeal
1 tbsp. all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
Brown beef (just until no longer pink) and onions in Dutch oven or large kettle, breaking up meat. Stir in tomato sauce, green peppers, corn, chili powder, salt and pepper. Bring to boil, lower heat, cover and simmer 15 minutes. Pour meat mixture into ungreased 10 inch deep dish pie plate.
GRAPE NUTS
3 1/2 c. graham flour
2 c. sour milk
1 c. molasses
1 tsp. soda
1 tsp. salt
Pour in greased pan and bake for 1/2 hour. Then break in pieces and bake again. Then grind through food chopper, then put in oven again and roast nice and brown. Don't have oven too hot, let it have plenty of time and stir often.
POTATO CAKE
2 c. sugar
2 c. flour
1 c. Crisco
1 c. mashed potatoes
3/4 c. sour milk (add 2 tsp. vinegar to sour)
1 tsp. baking soda
1 c. nuts
1 c. dates (optional)
4 eggs
Pinch salt
3 tbsp. cocoa
1 tsp. cloves
1 tsp. cinnamon
1/2 tsp. nutmeg
Mix together sugar, flour and Crisco. Add eggs, salt, cocoa, spices and mashed potatoes. Set aside milk with vinegar to sour. Mix soda, nuts and milk. Bake in oblong pan (12x16) at 350 degrees for 30-40 minutes or until done. Frost with chocolate frosting.
DIXIE CHICKEN
1 frying chicken (cut in parts), or buy parts
1/2 c. buttermilk or sour milk (make by adding lemon juice or vinegar to milk - 1 tbsp. per)
Salt
Corn flake crumbs
Ground (rubbed) sage
4 tbsp. melted margarine
Salt chicken pieces. Dip in buttermilk; then coat with corn flake crumbs. Sprinkle a little sage on each piece. Arrange in a single layer in a well- buttered pan. Pour melted margarine over each piece. Bake at 400 degrees for 1 hour.
QUICK CORN PONE
1 pt. sour milk (2 tbsp. vinegar or lemon juice and milk to equal 2 c.)
3/4 tsp. baking soda
2 eggs
1/2 c. sugar
4 tbsp. shortening
1 c. cornmeal
1 c. flour
1 tsp. salt
Scald baking soda (by adding small amount of boiling water to it); add to milk and stir briskly. In a mixing bowl, beat eggs, gradually mixing in the sugar, shortening, cornmeal, flour, and salt. Add sour milk mixture; mix and pour into a well greased 8 x 8 x 2 inch pan. Bake 30 minutes in 450 degree oven. This recipe came from my husband's great grandmother, Ella Nailor Lank (1868-1950)
CORN CRABMEAT CHOWDER
2 tbsp. olive oil
1 lg. onion, chopped
1 tsp. crushed red pepper or Tabasco sauce to taste
2 tbsp. flour
3 c. chicken broth or stock
1 c. corn
12 oz. crabmeat flakes
1 c. buttermilk or sour milk (1 c. milk plus 1 1/2 tbsp. lemon juice)
1 c. broccoli or zucchini, chopped
Put onions in oil to saute and add red peppers. Add broth and bring to boil. Add flour. Reduce heat to simmer and add corn, crabmeat flakes, buttermilk, broccoli, salt and pepper to taste. (Best when made ahead of time to allow the red pepper flavor to spread.)
TOMATO SOUP CAKE
1/2 c. sour milk
1 c. sugar
1 can tomato soup (10 oz.)
1 tsp. soda
1/4 tsp. cloves
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1/4 c. butter
2 tsp. baking powder
2 c. flour
1/2 c. raisins
Add all together and bake at 350 degrees for 35 minutes.
CASHEW SOUP MILK WAFFLES
2 c. flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 tbsp. sugar
1/2 c. chopped cashews
2 eggs, separated
1 1/4 c. sour milk or buttermilk
1/4 c. melted butter
Mix dry ingredients and nuts. Combine liquids including yolks, add to flour mixture. Fold in egg whites, beaten until stiff. Bake in hot waffle iron. Serve with butter and syrup. If it is desired to omit eggs, use 2 teaspoons baking powder. Yield: 4 medium sized waffles.
