Recipe: Adzhika (Spice paste from Georgia, Russia)

Hi Malin,

I couldn't find a recipe for Elarji. Here's one for adzhika, the Georgian (Russian) spice paste. The recipe comes from Please to the Table: The Russian Cookbook by Anya Von Bremzen, John Welchman.

Adzhika (Spice Paste from Georgia, Russia)

3 tablespoons sweet Hungarian paprika
2 teaspoons hot Hungarian paprika
1 teaspoon ground coriander
1/2 teaspoon ground fenugreek
1/2 teaspoon ground cumin
1/2 teaspoon coarse (kosher) salt
water

In a small bowl, combine all the spices for the paste. By teaspoonfuls, add just enough cold water to get a medium-thick paste.
